Jojo's Sriracha Cuts Sugar and Preservatives For Bolder, Seasonal Flavors
Hail to the Sriracha Queen - Fall Market Featured Artisan Jojo Collins of Jojo's Sriracha, a Denver-based taste and community maker... and TV sensation! JoJo's Sriracha's been featured on The Cooking Channel, Viceland, an award winning documentary and more!
FF: How did you begin your handmade journey?
JS: I took refined sugar out of my diet for a month and looked at the ingredients in the squeeze bottle sriracha and saw sugar was the second, followed by salt (even before garlic!). I knew I couldn’t live without my daily fix, so I decided to make my own. This began with me blowing up my kitchen with chili peppers and fermenting for the first time.
FF: What lead you to your current line of goods?
JS: I first started by making what I call the OG - the original gangster sriracha. This was basically my answer to sugar- and preservative-filled sriracha on the market. After moving the business from Brooklyn back to Denver, I was inspired to make green chili sriracha, which is currently my favorite. We just released a cherry sriracha with heirloom cherries from our friend’s orchard in California and we have a cider sriracha in the works!
FF: What materials do you work with & why?
JS: Chili peppers. Because it’s sriracha ;). We’re really interested in using local, in-season chili peppers whenever possible. Every season is different. I love working with new varieties of chili peppers. We also have a farmer who grows super-hot chili peppers for us. They are some of the hottest peppers in the world and really fun to work with.
FF: Inspiration comes from where?
I’m really inspired by flavor. Each batch is an opportunity to create something unique and delicious. I’m always taking notes and trying to create something that tastes amazing.
FF: What excites you for the future?
JS: Collaborating with other local businesses. I love collaborating and working in our community. There are so many people doing amazing things here and I love joining forces to create awesome products.
FF: Any advice for makers and biz entrepreneurs new to our creative community?
JS: Tenacity. Support. Community. Desire. I believe those are the pillars of creating anything meaningful. Only delve into something if you’ve got those four things.
FF: If you have a strong partnership with a non-profit org, what is it and what inspired you to do this?
JS: We did our first event this March with the ALS Association and raised over $2,500 for families fighting ALS. My mom died of ALS when I was 15 and we had little to no support to care for her with such a complicated disease. The ALS Association steps in and helps families like ours.
